- 250 g trim pork pieces
- 1 Tbspn vegetable oil
- 1 garlic clove, peeled and crushed
- 2 spring onions, sliced
- 1 cup broccoli
- 1 courgette, cut lengthways and sliced diagonally
- 1 tspn crushed ginger
- Juice of 1 orange
- 1 Tbspn sweet Thai chilli sauce
- 2 tspn salt-reduced soy sauce
- Slithered almonds
- Basmati brown rice
Step 1. Cook rice as per instructions.
Step 2. While rice is cooking, heat ½ of oil in a wok or pan.
Step 3. Add pork and garlic. Cook for a few minutes until brown.
Step 4. Remove from pan and keep warm.
Step 4. Add remaining oil to pan, add spring onions, broccoli, courgette and ginger. Cook for 1-2 minutes, tossing and stirring.
Step 5. Add orange juice, sweet chilli sauce and soy sauce. Cook for 2-3 minutes.
Step 6. Place pork back into pan. Stir-fry for a couple of minutes to warm through.
Step 7. Serve immediately on basmati rice, sprinkled with slithered almonds.
