(Serves 4 – Makes about 12)
- 425g can whole kernel sweetcorn
- 4 egg whites
- 1/2 tspn minced chilli paste (or 1 Tbspn Sweet Thai chilli sauce)
- 2 Tbspn cornflour
- 1 Tbspn parsely, chopped (or coriander)
- Freshly ground black pepper
Step 1. Drain sweetcorn.
Step 2. Beat egg whites until stiff peaks form.
Step 3. Fold in sweetcorn, cornflour, chilli paste, parsely and pepper.
Step 4. Cook quarter cupfuls in a non-stick frypan until golden, then flip and cook otherside. Keep warm until all fritters are cooked.
Step 5. Serve hot with lean crispy bacon and a fresh green salad.
