- 1 punnet strawberries
- 1 punnet blueberries
- 1 punnet raspberries
- 2-3 nectarines (or apricots)
- slice of watermelon
- low fat, thick Greek yoghurt
- runny honey (optional)
- slivered almonds or cinnamon (optional)
Step 1. Wash fruit and gently pat dry.
Step 2. Trim strawberries and cut in half. Slice watermelon, remove seeds and cut into cubes.
Step 3. Cut nectarines in half, remove stone. Slice each nectarine half into 4 pieces.
Step 4. Divide fruit amoung 4 dessert dishes or glasses.
Step 5. Spoon 2 tablespoons of Greek yoghurt over fruit in each dish. Optional extras: Drizzle with a little honey. Sprinkle with slivered almonds and cinnamon.
NB: You can adapt this healthy and refreshing fruit salad to the seasons, using whatever fruit is available. You can also add a bit more crunch by sprinkling with a couple of crumbled digestive biscuits over the fruit.
