250g extra-light cream cheese (at room temperature)
1/3 cup icing sugar, sifted (plus a little extra to sprinkle over)
1 orange, finely zested
1 Tbspn freshly squeezed orange juice
4 brandy baskets (purchased from supermarket)
60g fresh blueberries and 60g frozen blueberries (defrosted)
60g fresh raspberries and 60g frozen raspberries (defrosted)
6 strawberries, trimmed and sliced
Step 1. Place light cream cheese in a bowl and blend until softened.
Step 2. Sift in icing sugar, add orange zest and juice. Blend until well combined. (Place in fridge until ready to serve).
Step 3. When serving: spoon cream cheese mixture into brandy baskets. Top with berries. Sprinkle with a little icing sugar.
NB: You can use all fresh berries if you prefer. However it is quite nice when using frozen berries you use the juice from the drefosted berries to drizzle over the top.
