Spinach and Feta Muffins

(Makes 12)

Ingredients

  • 2 eggs
  • ¼ cup olive oil
  • ½ cup unsweetened yoghurt
  • 1 ½ cups self-rising flour
  • 100 g Feta cheese, crumbled
  • ¼ cup parmesan cheese
  • 2 cups baby spinach leaves, stems removed & roughly chopped
  • 2 Tbspn marjoram or oregano
  • Salt & pepper
  • 12 sun-dried tomatoes, chopped (optional)

Method

Step 1. Preheat oven to 200°C.

Step 2. Whisk together eggs, oil and yoghurt.

Step 3. Add flour, feta, parmesan, spinach and marjoram or oregano. Season with a little salt and pepper. Stir gently until just combined.

Step 4. Spoon mixture into muffin pan and top with sun-dried tomatoes if using.

Step 5. Bake for approximately 15-20 minutes, until lightly golden brown.

Optional extras: for a little added texture and flavor you can add1/4 cup pinenuts or 2 rashers lean bacon (cooked & chopped) when adding flour etc., or a tablespoon of basil pesto into the wet ingredients.
