(makes 18 slices)
- 1 cup sesame seeds
- 1 cup pumpkin seeds
- 4 tbs butter
- 3 tbs honey
- 1/2 cup stevia
- 1/2 cup chopped apricots
- 1/2 cup craisins
- 1/2 roasted nuts
- 50g (good quality over 70% dark chocolate) melted
Step 1. Place seeds on a baking tray lined with nonstick baking paper. Toast under grill carefully for about 3-4mins. Pour into a mixing bowl.
Step 2. Place butter, honey, and stevia in a nonstick pan. Heat until spread and sugar has dissolved. Increase the heat to high and heat for 3 more mins till the mixture is bubbling and begins to thicken.
Step 3. Pour hot syrup mixture into the bowl with seeds, fruit, and nuts. Mix together then lightly press into a slice tray lined with baking paper.
Step 4. Drizzle with dark chocolate. Cut while semi-hot before it sets completely.
