(Makes 12 medium sized muffins)
- 1 cup sultanas
- 2 Tbspn honey
- 2 lemons – rind and juice of both
- 1/4 cup low fat milk
- 1 cup natural low fat yoghurt
- 40g low-fat spread – melted
- 1 egg
- 1 cup bran flakes
- 1 1/2 cups plain flour
- 3 tspn baking powder
- 1/3 cup brown sugar
Step 1. Preheat oven to 190ºC. Grease muffin pan.
Step 2. In a saucepan add sultanas, honey, rind and juice of both lemons. Gently bring to boil. Remove from heat and allow to cool.
Step 3. In a large bowl mix together milk, yoghurt, melted butter and egg.
Step 4. Add sultana mixture to the bowl and mix well.
Step 5. Sift in flour, baking powder and sugar. Add bran flakes. Mix gently until just combined.
Step 6. Spoon into muffins pans.
Step 7. Bake for 15-20 minutes until golden.
