- 400 g penne pasta*
- 600 g chicken mince
- 2 Tbspn olive oil
- 2 cloves garlic, peeled and crushed
- 1 medium onion, finely diced
- 1/4 cup tomato paste
- 1/2 cup chicken stock
- 400 g can chopped tomatoes
- 1 tspn mixed herbs
- freshly ground black peper
- grated parmesan (to serve, optional)
Step 1. Cook pasta according to packet instructions and then drain.
Step 2. Meanwhile, heat oil in large fry pan. Add onion and garlic. Cook, stirring often for 4-5 minutes until onion is tender.
Step 3. Add chicken mince, cook until browned,
Step 4. Stir in tomato paste and cook for 1 minute.
Step 5. Add chicken stock, tomatoes, mixed herbs and pepper. Stir to combine. Bring to the boil for 5 minutes. Reduce heat and simmer until liquid is reduced and sauce is thickens.
Step 6. To serve place penne into bowls, spoon over bolognaise and sprinkle with a little parmesan (if using). Serve with steamed greens on the side.
*Use whole meal,gluten free or zucchini noodles as it suits!
